A Korean baekban (백반) is a set meal: rice, soup, a main, and as many small side dishes as the kitchen feels like making. It's the most ordinary thing you can eat in Korea and, done properly, one of the best.

Dongbaek Kitchen does it with Jeju ingredients — abalone, hairtail and Jeju black pork, all from the island — and sends it out on an old-style silver tray with around a dozen dishes on it. Taxi drivers recommend this place to their passengers, which on Jeju is as reliable a signal as you'll get.

Where it is

Ten minutes' drive from Jeju Airport, out on the coast road in Dodu-dong. It looks like a vintage cabin from outside and is warmer inside than you'd expect — the knitted bits and pieces around the room were made by the owner.

There are floor seats as well as tables — the low kind where you sit on a cushion. Certified as a model restaurant (모범음식점) by Jeju City, which is a hygiene and service designation.

Parking is the weak point. There's no dedicated car park, so you'll be on the roadside — the street isn't busy, so it's manageable, but don't expect a space out front.

What arrives

Jeju black pork stir-fry comes out red and looks like it will hurt. It won't — in Korean home cooking, red frequently means seasoned rather than hot. That said, calibrate: locals call this “not spicy at all”, and locals eat kimchi every day. It's gochujang-seasoned, so there is a gentle warmth — fine for most people, noticeable if chilli isn't your thing. Smoky, tender, closer to something your grandmother would make.

Two abalone dishes come with the set, served whole — firm and faintly sweet. Jeju is abalone country, and getting it as a side dish rather than a splurge is the point of eating here.

Grilled hairtail: crisp outside, soft inside. Note that this is the one dish that isn't refillable.

Horned turban salad (뿔소라 무침) — a Jeju shellfish, dressed sweet and mildly hot. Plus egg roll, seasoned bean sprouts, stir-fried garlic scapes, anchovies, pan-fried tofu, kimchi. Each one seasoned properly rather than as filler.

The self-service bar

Rice, soup and most of the side dishes are on a self-service bar with unlimited refills, kept clean and restocked. In practice you may not need it — the initial tray is already more food than most people finish.

One practical warning

With a dozen dishes on the tray, the table gets crowded fast. If there are four or more of you, split across two tables rather than crowding one.
