Neungso Bibim Guksu sits on the west side of Jeju, in Aewol, about twenty minutes from the airport. The dining room is built entirely from Canadian fir, with a ceiling high enough that it feels more like a hall than a noodle shop, and there's a large car park out front. Upsizing your noodles costs nothing here, which is unusual.

Bibim-guksu (비빔국수) is the dish the place is named for: cold wheat noodles in a red sauce, no broth, mixed together at the table before you start. The sauce is fermented for two weeks from vegetables and fruit, and that shows in the taste — sweet-sour and clean at the finish rather than blunt. If you've been steering clear of Korean red sauces, this is a gentle place to start.

What to order

Usamgyeop bibim-guksu (우삼겹비빔국수), ₩11,000. The house bibim-guksu with thin-sliced beef brisket over the top. Cold, chewy noodles, a bright and tangy sauce, and warm beef running through it. Heat is around 2 out of 5, less than the colour suggests. It's still chilli-based, so you can ask for it milder when you order.

Eomuk janchi-guksu (어묵잔치국수), ₩11,000. The warm, mild counterpart: thin noodles in an anchovy-and-kelp broth simmered daily, with big slabs of fish cake on top. The broth is restrained rather than rich, closer to Japanese oden broth than to ramen. No chilli.

Gamja mandu (감자만두), ₩5,000. Potato-starch dumplings with a chewy, translucent wrapper — a different thing from the thin-skinned dumplings you'll find elsewhere. Worth adding to the order.

A few things worth knowing

Upsizing is free, and you probably won't need it. Half, regular and extra-large all cost the same. A regular portion here is about what most places would call large, so the standard size is usually plenty.

There are three self-service bars. Pickled radish wraps, cabbage kimchi, spring onion, soy-pickled vegetables, green chilli, chilli powder and black pepper — all free and unlimited. If you'd like more heat in your bibim-guksu, the chilli powder is there for it. Hot broth is on self-serve too, which goes nicely alongside the cold noodles.

It seats 150. The group tables are large, there's a row of single seats along the window, and high chairs are available. Solo diners are common here, and the window counter looks out over the field.
